Ingredients
- 2 lbs oxtail, cut into pieces
- 4 cups beef broth

- 2 bay leaves
- 1 inch ginger, sliced
- 1 lemongrass stalk, smashed
- 1 tsp salt

- 2 tbsp vegetable oil
- 4 cups water
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add oxtail pieces and cook until browned on all sides.
- Add onion, garlic, and ginger. Sauté until fragrant.
- Pour in beef broth and water. Add bay leaves and lemongrass. Bring to a boil, then reduce heat and simmer for 2 hours, or until oxtail is tender.
- Add tomatoes, carrots, and celery. Cook for an additional 30 minutes.
- Season with salt and pepper. Adjust seasoning to taste.
