Ingredients
- 2 lbs oxtail
- 4 cups beef broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 stalks lemongrass, bruised
- 3 kaffir lime leaves
- 1 inch galangal, sliced
- 2 bay leaves
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp vegetable oil
- 4 cups water
- 2 tbsp fried shallots for garnish
Instructions
- In a large pot, heat vegetable oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
- Add oxtail pieces and cook until browned on all sides.
- Pour in beef broth and water, then add lemongrass, kaffir lime leaves, galangal, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 2.5 hours, or until the oxtail is tender.
- Add carrots and tomatoes, continue to simmer for another 30 minutes.
- Once the oxtail is tender and the vegetables are cooked, remove the soup from heat.
- Serve the soup hot, garnished with fried shallots.
