Indonesian Oxtail Soup Fusion (sop Buntut Fusion)

Ingredients

  • 2 lbs oxtail
  • 4 cups beef broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 stalks lemongrass, bruised
  • 3 kaffir lime leaves
  • 1 inch galangal, sliced
  • 2 bay leaves
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp vegetable oil
  • 4 cups water
  • 2 tbsp fried shallots for garnish

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add oxtail pieces and cook until browned on all sides.
  3. Pour in beef broth and water, then add lemongrass, kaffir lime leaves, galangal, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 2.5 hours, or until the oxtail is tender.
  4. Add carrots and tomatoes, continue to simmer for another 30 minutes.
  5. Once the oxtail is tender and the vegetables are cooked, remove the soup from heat.
  6. Serve the soup hot, garnished with fried shallots.
