Indonesian Smashed Fried Chicken Bliss (ayam Penyet Bliss)

Ingredients

  • 4 chicken thighs
  • 2 cups of water
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup all-purpose flour
  • Oil for frying
  • 4 cloves garlic
  • 5 red chilies
  • 2 tomatoes
  • 2 tbsp sweet soy sauce
  • 1 tbsp lime juice
  • 1 cucumber, sliced
  • 4 cups of cooked rice

Instructions

  1. Boil the chicken thighs in water with salt and sugar until fully cooked. Remove and drain.
  2. Flatten the chicken thighs with a mallet and coat with flour.
  3. Heat oil in a pan and fry the chicken until golden and crispy. Drain on paper towels.
  4. Using a mortar and pestle, smash garlic, red chilies, and tomatoes to make sambal. Add sweet soy sauce and lime juice.
  5. Serve the fried chicken with sambal, sliced cucumber, and rice.
