Indonesian Spicy Beef Stew Rhapsody (rendang Rhapsody)

Ingredients

  • 2 lbs beef, cut into cubes
  • 4 shallots, finely chopped
  • 6 cloves garlic, minced
  • 3 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1-inch galangal, sliced
  • 1 can (14 oz) coconut milk
  • 2 cups water
  • 3 tbsp tamarind paste
  • 3 tbsp palm sugar
  • 5 red chilies, sliced
  • Salt to taste

Instructions

  1. In a large pot, combine the beef, shallots, garlic, lemongrass, kaffir lime leaves, galangal, coconut milk, and water.
  2. Cook over medium heat until the beef is tender, about 2 hours.
  3. Add the tamarind paste, palm sugar, red chilies, and salt. Cook for another hour, stirring occasionally, until the sauce thickens.
  4. Remove from heat and serve the Rendang Rhapsody hot with steamed rice.
