Ingredients
- 2 lbs beef, cut into cubes
- 4 shallots, finely chopped
- 6 cloves garlic, minced
- 3 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1-inch galangal, sliced
- 1 can (14 oz) coconut milk
- 2 cups water
- 3 tbsp tamarind paste
- 3 tbsp palm sugar
- 5 red chilies, sliced
- Salt to taste
Instructions
- In a large pot, combine the beef, shallots, garlic, lemongrass, kaffir lime leaves, galangal, coconut milk, and water.
- Cook over medium heat until the beef is tender, about 2 hours.
- Add the tamarind paste, palm sugar, red chilies, and salt. Cook for another hour, stirring occasionally, until the sauce thickens.
- Remove from heat and serve the Rendang Rhapsody hot with steamed rice.
