Ingredients
- 1 cup roasted peanuts
- 4 shallots
- 3 cloves garlic
- 4-6 red chili peppers
- 2 tablespoons palm sugar
- 1 teaspoon tamarind paste
- 1 teaspoon salt
- 4 cups mixed vegetables (cabbage, bean sprouts, spinach, water spinach, or cucumber)
Instructions
- Grind the roasted peanuts into a fine powder and set aside.
- Blend shallots, garlic, and red chili peppers into a smooth paste.
- Heat the paste in a pan, add palm sugar, tamarind paste, and salt, and cook for 5 minutes.
- Arrange the mixed vegetables on a serving plate and pour the spicy peanut sauce over them.
