Indonesian Tofu Omelette (tahu Telur)

Ingredients
- 1 block of firm tofu, diced
- 4 eggs
- 1 cup bean sprouts
- 2 shallots, thinly sliced
- 2 cloves garlic, minced
- 1/2 cup all-purpose flour
- 1/2 cup water
- 1/2 tsp salt
- 1/4 tsp ground white pepper
- Oil for frying
Instructions
- In a bowl, mix the diced tofu, bean sprouts, shallots, and garlic.
- In another bowl, whisk the eggs, flour, water, salt, and pepper until smooth.
- Combine the tofu mixture with the egg mixture.
- Heat oil in a non-stick pan over medium heat.
- Pour the tofu and egg mixture into the pan, spreading it evenly.
- Cook for 3-4 minutes until the bottom is golden and crispy.
- Flip the omelette and cook for another 3-4 minutes.
- Transfer to a serving plate and cut into wedges.
