Ingredients
- 2 cups jasmine rice
- 4 cups coconut milk

- 2 cloves garlic, minced
- 2 red chilies, sliced
- 4 hard-boiled eggs, peeled
- 1 cucumber, sliced
Instructions
- Rinse the jasmine rice until the water runs clear, then drain.
- In a large pot, combine the rice, coconut milk, lemongrass, kaffir lime leaves, turmeric powder, and salt. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, heat some oil in a pan and sauté the shallots, garlic, and red chilies until fragrant.
- Once the rice is cooked, fluff it with a fork and remove the lemongrass and kaffir lime leaves.
- Transfer the rice to a serving platter and garnish with the sautéed shallots, garlic, and chilies.
- Serve the Indonesian Yellow Rice Carnival with hard-boiled eggs and sliced cucumber on the side.
