Injera Firfir (lentil Pancakes)
Injera Firfir is a traditional Eritrean dish made with leftover injera (sourdough flatbread) and lentils. It's a flavorful and hearty dish that is perfect for breakfast or brunch.
Ingredients
- 2 cups crumbled injera (sourdough flatbread)
- 1 cup cooked lentils
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2-3 green chilies, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon berbere spice (or paprika for milder flavor)
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1/4 cup water
Instructions
- Heat olive oil in a pan over medium heat.
- Add the onions, garlic, and green chilies. Sauté until the onions are translucent.
- Add the tomatoes, berbere spice, cumin, and salt. Cook for 5 minutes, stirring occasionally.
- Add the crumbled injera and water. Mix well and cook for 5-7 minutes, stirring occasionally.
- Add the cooked lentils and mix until well combined. Cook for an additional 5 minutes.
- Remove from heat and serve hot.
