Injera Firfir (lentil Pancakes)

Ingredients

  • 2 cups crumbled injera (sourdough flatbread)
  • 1 cup cooked lentils
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2-3 green chilies, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon berbere spice (or paprika for milder flavor)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1/4 cup water

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add the onions, garlic, and green chilies. Sauté until the onions are translucent.
  3. Add the tomatoes, berbere spice, cumin, and salt. Cook for 5 minutes, stirring occasionally.
  4. Add the crumbled injera and water. Mix well and cook for 5-7 minutes, stirring occasionally.
  5. Add the cooked lentils and mix until well combined. Cook for an additional 5 minutes.
  6. Remove from heat and serve hot.
