Inkoko Yachikondi is a traditional Zambian dish that features grilled salmon glazed with Chibuku, a popular local beer. This dish combines the rich flavors of the salmon with the sweet and tangy Chibuku glaze, creating a unique and delicious meal.
Ingredients
- 4 salmon fillets
- 1 cup Chibuku beer
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small saucepan, combine the Chibuku beer, honey, garlic, and ginger. Simmer over medium heat for 5-7 minutes until the glaze thickens slightly.
- Season the salmon fillets with salt and pepper.
- Place the salmon fillets on the grill and brush with the Chibuku glaze. Grill for 4-5 minutes on each side, brushing with more glaze as they cook, until the salmon is cooked through.
- Remove the salmon from the grill and brush with any remaining glaze before serving.
