Inkoko Yachikondi (chibuku-glazed Grilled Shrimp)

Ingredients

  • 1 kg large shrimp, peeled and deveined
  • 1 cup Chibuku (traditional Zambian sorghum beer)
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 lemon, cut into wedges

Instructions

  1. In a bowl, combine Chibuku, honey, minced garlic, paprika, salt, and black pepper to make the marinade.
  2. Add the peeled and deveined shrimp to the marinade and toss to coat. Let it marinate for 15 minutes.
  3. Preheat the grill to medium-high heat and lightly oil the grate.
  4. Thread the marinated shrimp onto skewers and brush with vegetable oil.
  5. Grill the shrimp for 2-3 minutes on each side, or until they are opaque and slightly charred.
  6. Brush the shrimp with the remaining marinade while grilling to create a glaze.
  7. Remove the shrimp from the grill and serve with lemon wedges.
