Inkoko Yachikondi (zesty Zambian Chicken)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • 1/4 cup vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Season the chicken pieces with salt, pepper, and paprika.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the seasoned chicken pieces and brown them on all sides. Remove and set aside.
  4. In the same pot, add the onions, garlic, ginger, and green chilies. Sauté until the onions are soft and translucent.
  5. Add the tomatoes, cumin, coriander, turmeric, and cinnamon. Cook for 5 minutes, stirring occasionally.
  6. Return the browned chicken pieces to the pot and stir to coat them with the tomato and spice mixture.
  7. Reduce the heat, cover the pot, and let the chicken simmer for 45 minutes to 1 hour, or until the chicken is cooked through.
  8. Garnish with fresh cilantro before serving.
