Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, chopped
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cinnamon
- 1/4 cup vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Season the chicken pieces with salt, pepper, and paprika.
- Heat the vegetable oil in a large pot over medium heat.
- Add the seasoned chicken pieces and brown them on all sides. Remove and set aside.
- In the same pot, add the onions, garlic, ginger, and green chilies. Sauté until the onions are soft and translucent.
- Add the tomatoes, cumin, coriander, turmeric, and cinnamon. Cook for 5 minutes, stirring occasionally.
- Return the browned chicken pieces to the pot and stir to coat them with the tomato and spice mixture.
- Reduce the heat, cover the pot, and let the chicken simmer for 45 minutes to 1 hour, or until the chicken is cooked through.
- Garnish with fresh cilantro before serving.
