Ingredients

  • 4 small cucumbers, thinly sliced
  • 1 cup white vinegar
  • 1 cup water

  • 1 teaspoon whole black peppercorns
  • 2 bay leaves

Instructions

  1. In a small saucepan, combine the white vinegar, water, sugar, salt, whole black peppercorns, and bay leaves. Bring to a simmer over medium heat, stirring occasionally, until the sugar and salt are fully dissolved. Remove from heat and let the brine cool to room temperature.
  2. Place the thinly sliced cucumbers in a clean, sterilized glass jar or container.
  3. Pour the cooled brine over the cucumbers, making sure they are fully submerged. If needed, place a small plate or weight on top to keep the cucumbers submerged.
  4. Seal the jar or container and refrigerate for at least 24 hours before serving. The pickled cucumbers will last in the refrigerator for up to 2 weeks.
