Ingredients
- 1 large head of cabbage
- 1 pound ground beef
- 1/2 cup uncooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 28-ounce can crushed tomatoes
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Bring a large pot of salted water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a bowl, mix together the ground beef, uncooked rice, onion, garlic, parsley, Parmesan cheese, egg, salt, and pepper.
- Place a spoonful of the meat mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
- Heat the olive oil in a large pot over medium heat. Add the crushed tomatoes, oregano, salt, and pepper. Place the cabbage rolls seam side down in the pot.
- Cover and simmer for 1 hour, or until the cabbage is tender and the filling is cooked through.
