Ingredients

  • 1 large head of cabbage
  • 1 pound ground beef
  • 1/2 cup uncooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 28-ounce can crushed tomatoes
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. In a bowl, mix together the ground beef, uncooked rice, onion, garlic, parsley, Parmesan cheese, egg, salt, and pepper.
  3. Place a spoonful of the meat mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
  4. Heat the olive oil in a large pot over medium heat. Add the crushed tomatoes, oregano, salt, and pepper. Place the cabbage rolls seam side down in the pot.
  5. Cover and simmer for 1 hour, or until the cabbage is tender and the filling is cooked through.
