Ingredients
- 2 lbs beef chuck, cut into cubes
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 cups beef broth
- 4 cups cassava, peeled and cubed
- 1/2 cup coconut milk
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Season the beef cubes with salt and pepper.
- Heat vegetable oil in a large pot over medium heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.
- In the same pot, sauté the onions and garlic until softened.
- Add the diced tomatoes and cook until they start to break down.
- Return the beef to the pot and pour in the beef broth. Bring to a simmer, then cover and cook for 1.5 to 2 hours, or until the beef is tender.
- While the beef is cooking, place the cassava in a separate pot, cover with water, and boil until tender. Drain the cassava and mash with coconut milk until smooth.
- Serve the braised beef over the mashed cassava and enjoy!
