Iranian Pistachio Soup (Ash-e Pisteh)

Ingredients

  • 1 cup shelled pistachios
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup chopped spinach
  • 1 cup chopped parsley
  • 1/2 cup chopped cilantro
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the pistachios, spinach, parsley, and cilantro to the pot. Stir in the turmeric and cumin, then pour in the vegetable broth.
  3. Bring the soup to a boil, then reduce the heat and let it simmer for 45 minutes, stirring occasionally.
  4. Once the pistachios are tender, use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste.
  5. Serve the Ash-e Pisteh hot, garnished with a sprinkle of chopped pistachios and a drizzle of olive oil.
