Iraqi Chicken and Rice with Turmeric (Timman Z'faran)

Ingredients

  • 4 chicken thighs
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground turmeric
  • 4 cups chicken broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the chicken thighs on both sides. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Stir in the turmeric, then add the rice and cook for 2 minutes.
  4. Pour in the chicken broth and season with salt and pepper. Bring to a boil.
  5. Reduce heat to low, return the chicken to the pot, cover, and simmer for 20 minutes or until the rice is tender and the chicken is cooked through.
  6. Sprinkle with chopped parsley before serving.
