Iraqi Dolma (mahshi) Stuffed Vegetables

Ingredients

  • 6 large bell peppers
  • 6 medium tomatoes
  • 6 small zucchinis
  • 1 cup long-grain rice
  • 300g ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 tablespoons tomato paste
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • Salt and pepper to taste
  • 3 cups chicken or vegetable broth

Instructions

  1. Prepare the vegetables by cutting off the tops and scooping out the seeds and membranes.
  2. Rinse the rice under cold water until the water runs clear, then drain.
  3. In a bowl, mix the rice, ground meat, onion, chopped tomatoes, tomato paste, herbs, spices, salt, and pepper.
  4. Stuff the vegetable cavities with the rice and meat mixture, leaving some space for the rice to expand.
  5. Place the stuffed vegetables in a large pot and pour the broth over them.
  6. Cover the pot and cook over medium heat for 1 hour, or until the vegetables are tender and the rice is cooked.
  7. Serve the Iraqi Dolma hot, garnished with additional chopped herbs if desired.
