Iraqi Dolma (mahshi) Stuffed Vegetables

Ingredients
- 6 large bell peppers
- 6 medium tomatoes
- 6 small zucchinis
- 1 cup long-grain rice
- 300g ground beef or lamb
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 tablespoons tomato paste
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- Salt and pepper to taste
- 3 cups chicken or vegetable broth
Instructions
- Prepare the vegetables by cutting off the tops and scooping out the seeds and membranes.
- Rinse the rice under cold water until the water runs clear, then drain.
- In a bowl, mix the rice, ground meat, onion, chopped tomatoes, tomato paste, herbs, spices, salt, and pepper.
- Stuff the vegetable cavities with the rice and meat mixture, leaving some space for the rice to expand.
- Place the stuffed vegetables in a large pot and pour the broth over them.
- Cover the pot and cook over medium heat for 1 hour, or until the vegetables are tender and the rice is cooked.
- Serve the Iraqi Dolma hot, garnished with additional chopped herbs if desired.
