Ingredients

  • 2 large potatoes, peeled and grated

Instructions

  1. In a large bowl, mix together the grated potatoes, chopped onion, flour, baking powder, and buttermilk. Season with salt and pepper.

  3. Spoon the potato mixture into the skillet, forming small pancakes. Cook for 4-5 minutes on each side, until golden brown and crispy.
  4. Remove from the skillet and drain on paper towels. Repeat with the remaining potato mixture.
  5. Serve the boxty hot with a dollop of sour cream or applesauce, if desired.
