Irish Boxty
Irish Boxty is a traditional potato pancake that hails from Western European cuisine. It's a delicious and hearty dish that is perfect for breakfast or as a side for dinner.
Ingredients
- 2 large potatoes, peeled and grated
- 1 onion, finely chopped
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup buttermilk
- Salt and pepper to taste
- Butter or oil for frying
Instructions
- In a large bowl, mix together the grated potatoes, chopped onion, flour, baking powder, and buttermilk. Season with salt and pepper.
- Heat a skillet over medium heat and add a little butter or oil.
- Spoon the potato mixture into the skillet, forming small pancakes. Cook for 4-5 minutes on each side, until golden brown and crispy.
- Remove from the skillet and drain on paper towels. Repeat with the remaining potato mixture.
- Serve the boxty hot with a dollop of sour cream or applesauce, if desired.
