Irish Coffee Muffins

Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup strong brewed coffee, cooled
- 1/4 cup Irish whiskey
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the melted butter, brewed coffee, Irish whiskey, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped walnuts, if using.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
