Irish Coffee Tiramisu

Ingredients

  • 1 cup strong brewed coffee, cooled
  • 1/4 cup Irish whiskey
  • 3 large egg yolks
  • 1/2 cup granulated sugar
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • 2 tablespoons unsweetened cocoa powder

Instructions

  1. In a small bowl, combine the cooled coffee and Irish whiskey. Set aside.
  2. In a heatproof bowl, whisk together the egg yolks and sugar. Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Whisk constantly until the mixture thickens and doubles in volume. Remove from heat and let it cool slightly.
  3. Add the mascarpone cheese to the egg yolk mixture and stir until smooth.
  4. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.
  5. Dip each ladyfinger into the coffee and whiskey mixture for a few seconds, making sure not to soak them completely. Arrange a layer of soaked ladyfingers in the bottom of a serving dish.
  6. Spoon half of the mascarpone mixture over the ladyfingers and spread it into an even layer. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  7. Cover and refrigerate the tiramisu for at least 4 hours, or overnight, to allow the flavors to meld.
  8. Before serving, dust the top of the tiramisu with unsweetened cocoa powder.
