Irish Colcannon
Irish Colcannon is a traditional Irish dish made with mashed potatoes, cabbage, and butter. It's a comforting and hearty side dish that pairs well with any main course.
Ingredients
- 4 large potatoes, peeled and cubed
- 4 cups chopped cabbage
- 1/2 cup milk
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Boil the potatoes in a large pot of salted water until tender, about 15 minutes.
- In a separate pot, cook the cabbage in boiling water for 5-7 minutes until tender.
- Drain the potatoes and mash them with the milk and 2 tablespoons of butter.
- Stir in the cooked cabbage and season with salt and pepper.
- Transfer the colcannon to a serving dish and make a well in the center. Add the remaining butter to melt in the well.
