Irish Colcannon

Irish Colcannon is a traditional Irish dish made with mashed potatoes, cabbage, and butter. It's a comforting and hearty side dish that pairs well with any main course.

Irish Colcannon

Ingredients

  • 4 large potatoes, peeled and cubed
  • 4 cups chopped cabbage
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes.
  2. In a separate pot, cook the cabbage in boiling water for 5-7 minutes until tender.
  3. Drain the potatoes and mash them with the milk and 2 tablespoons of butter.
  4. Stir in the cooked cabbage and season with salt and pepper.
  5. Transfer the colcannon to a serving dish and make a well in the center. Add the remaining butter to melt in the well.
