Irish Colcannon Mash
Irish Colcannon Mash is a traditional dish from the Islands of the North Atlantic (IONA) cuisine, made with creamy mashed potatoes and tender kale or cabbage, flavored with butter and green onions.
Ingredients
- 4 large potatoes, peeled and cubed
- 4 cups chopped kale or cabbage
- 1/2 cup milk
- 4 tablespoons butter
- 4 green onions, chopped
- Salt and pepper to taste
Instructions
- Boil the potatoes in a large pot of salted water until tender, about 15 minutes.
- In a separate pot, cook the kale or cabbage in boiling water for 5-7 minutes until tender. Drain and set aside.
- Drain the potatoes and return them to the pot. Add the milk and butter, then mash until smooth.
- Stir in the cooked kale or cabbage and green onions. Season with salt and pepper to taste.
- Transfer the colcannon mash to a serving dish and make a well in the center. Add a pat of butter to melt in the well before serving.
