Irish Colcannon Mash

Irish Colcannon Mash is a traditional dish from the Islands of the North Atlantic (IONA) cuisine, made with creamy mashed potatoes and tender kale or cabbage, flavored with butter and green onions.

Irish Colcannon Mash

Ingredients

  • 4 large potatoes, peeled and cubed
  • 4 cups chopped kale or cabbage
  • 1/2 cup milk
  • 4 tablespoons butter
  • 4 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes.
  2. In a separate pot, cook the kale or cabbage in boiling water for 5-7 minutes until tender. Drain and set aside.
  3. Drain the potatoes and return them to the pot. Add the milk and butter, then mash until smooth.
  4. Stir in the cooked kale or cabbage and green onions. Season with salt and pepper to taste.
  5. Transfer the colcannon mash to a serving dish and make a well in the center. Add a pat of butter to melt in the well before serving.
