Irish Colcannon Pancakes

Ingredients

  • 2 cups mashed potatoes
  • 1 cup finely chopped cabbage
  • 4 slices crispy bacon, crumbled
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 2 tablespoons melted butter

Instructions

  1. In a large bowl, mix together the mashed potatoes, chopped cabbage, and crumbled bacon.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, whisk together the milk, eggs, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold the potato mixture into the pancake batter.
  6. Heat a non-stick pan over medium heat and lightly grease with butter or oil.
  7. Pour 1/4 cup of batter onto the pan for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
  8. Repeat with the remaining batter.
  9. Serve the colcannon pancakes warm with your favorite toppings.
