Ingredients
- 2 cups mashed potatoes
- 1 cup finely chopped cabbage
- 4 slices crispy bacon, crumbled
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 eggs
- 2 tablespoons melted butter
Instructions
- In a large bowl, mix together the mashed potatoes, chopped cabbage, and crumbled bacon.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- In another bowl, whisk together the milk, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold the potato mixture into the pancake batter.
- Heat a non-stick pan over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the pan for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
- Repeat with the remaining batter.
- Serve the colcannon pancakes warm with your favorite toppings.
