Irish Guinness Beef Stew
Irish Guinness Beef Stew is a hearty and flavorful dish that is perfect for a cozy night in. This traditional Northern European cuisine stew is made with tender beef, root vegetables, and of course, a generous amount of Guinness beer.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 cup Guinness beer
- 2 tbsp tomato paste
- 2 bay leaves
- 1 tsp sugar
- 4 large carrots, peeled and cut into 1-inch chunks
- 4 medium potatoes, peeled and cut into 1-inch chunks
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes and brown on all sides. Remove the beef from the pot and set aside.
- Lower the heat to medium and add the chopped onion to the pot. Cook until the onion is soft and translucent, then add the minced garlic and cook for an additional minute.
- Pour in the beef broth and Guinness beer, then stir in the tomato paste, bay leaves, and sugar. Return the browned beef to the pot. Bring the stew to a simmer, then cover and cook for 1 hour.
- After 1 hour, add the carrots and potatoes to the stew. Continue to simmer, covered, for an additional 45 minutes to 1 hour, or until the beef and vegetables are tender. Season with salt and pepper to taste.
- Discard the bay leaves and serve the Irish Guinness Beef Stew hot, with crusty bread or over mashed potatoes.
