Irish Guinness Chocolate Cake

Ingredients

  • 1 cup Guinness stout
  • 1 cup unsalted butter
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 3/4 cup sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a saucepan, heat the Guinness and butter until the butter is melted. Remove from heat and whisk in the cocoa powder and sugar until smooth.
  3. In a separate bowl, whisk together the sour cream, eggs, and vanilla extract. Gradually add the Guinness mixture, whisking until well combined.
  4. In another bowl, sift together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
  5. Pour the batter into the prepared cake pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
