Irish Guinness Chocolate Cake

Ingredients
- 1 cup Guinness stout
- 1 cup unsalted butter
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 3/4 cup sour cream
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking soda
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a saucepan, heat the Guinness and butter until the butter is melted. Remove from heat and whisk in the cocoa powder and sugar until smooth.
- In a separate bowl, whisk together the sour cream, eggs, and vanilla extract. Gradually add the Guinness mixture, whisking until well combined.
- In another bowl, sift together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
- Pour the batter into the prepared cake pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
