Ingredients
- 1 loaf Irish soda bread, cut into cubes
- 6 large eggs
- 1 1/2 cups whole milk
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup raisins
- 2 tablespoons unsalted butter, melted
- Maple syrup, for serving
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Place the Irish soda bread cubes in the prepared baking dish.
- In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt.
- Pour the egg mixture over the bread cubes, making sure all the bread is coated. Sprinkle the raisins over the top.
- Drizzle the melted butter over the top of the casserole.
- Bake for 40-45 minutes, or until the top is golden brown and the custard is set.
