Irish Soda Bread Pudding

Ingredients

  • 4 cups of Irish soda bread, cubed
  • 4 eggs
  • 1 1/2 cups of whole milk
  • 1/2 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of salt
  • 1/2 cup of raisins

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking dish.
  2. Place the cubed Irish soda bread in the prepared baking dish.
  3. In a mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt.
  4. Pour the egg mixture over the bread, making sure all the bread is coated. Let it sit for 10 minutes to allow the bread to absorb the liquid.
