Irish Soda Bread Pudding

Ingredients
- 4 cups of Irish soda bread, cubed
- 4 eggs
- 1 1/2 cups of whole milk
- 1/2 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of salt
- 1/2 cup of raisins
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking dish.
- Place the cubed Irish soda bread in the prepared baking dish.
- In a mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt.
- Pour the egg mixture over the bread, making sure all the bread is coated. Let it sit for 10 minutes to allow the bread to absorb the liquid.
- Sprinkle the raisins over the top of the bread pudding.
- Bake in the preheated oven for 45 minutes, or until the pudding is set and the top is golden brown.
- Let the bread pudding cool for a few minutes before serving.
