Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 1/4 cup ghee
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped cilantro
  • 1 tablespoon ginger-garlic paste
  • Whole spices (cinnamon, cardamom, cloves)

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes.
  2. Marinate the chicken with yogurt, ginger-garlic paste, and spices for 1 hour.
  3. Heat ghee in a large pot and sauté the onions until golden brown.
  4. Add the marinated chicken and cook until the chicken is half done.
  5. Layer the half-cooked chicken with soaked rice, mint leaves, and cilantro in the pot.
  6. Add tomatoes and remaining ghee on top of the rice.
  7. Cover the pot and cook on low heat for 20 minutes until the rice and chicken are fully cooked.
  8. Fluff the biryani gently with a fork before serving.
