Ingredients
- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 1/4 cup ghee
- 1/4 cup chopped mint leaves
- 1/4 cup chopped cilantro
- 1 tablespoon ginger-garlic paste
- Whole spices (cinnamon, cardamom, cloves)
Instructions
- Wash the basmati rice and soak it in water for 30 minutes.
- Marinate the chicken with yogurt, ginger-garlic paste, and spices for 1 hour.
- Heat ghee in a large pot and sauté the onions until golden brown.
- Add the marinated chicken and cook until the chicken is half done.
- Layer the half-cooked chicken with soaked rice, mint leaves, and cilantro in the pot.
- Add tomatoes and remaining ghee on top of the rice.
- Cover the pot and cook on low heat for 20 minutes until the rice and chicken are fully cooked.
- Fluff the biryani gently with a fork before serving.
