Ingredients

  • 500g cottage cheese (paneer), cut into cubes
  • 1 cup yogurt
  • 2 onions, finely sliced
  • 2 tomatoes, pureed
  • 1/4 cup cashew nuts, ground into a paste
  • 1/4 cup fresh cream
  • 2 tbsp ghee (clarified butter)
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 tsp saffron strands, soaked in 2 tbsp warm milk
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. In a bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Add the cottage cheese cubes to the marinade and let it sit for 15 minutes.
  2. Heat ghee in a heavy-bottomed pan. Add the sliced onions and sauté until golden brown.
  3. Add the tomato puree and cook until the ghee separates from the masala.
  4. Add the marinated cottage cheese cubes and cook for 5 minutes.
  5. Stir in the cashew nut paste, garam masala, and saffron-infused milk. Cover the pan with a tight-fitting lid and let it cook on low heat for 30-40 minutes.
  6. Once the cottage cheese is tender, stir in the fresh cream and cook for another 5 minutes.
  7. Garnish with fresh coriander leaves and serve hot.
