Ingredients
- 1 1/2 pounds lamb shoulder, cut into chunks
- 2 tablespoons olive oil
- 1/4 cup rice
- 2 cups plain yogurt
- 3 eggs
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium-high heat. Add the lamb chunks and cook until browned on all sides, about 5 minutes.
- Spread the rice evenly on the bottom of a baking dish.
- Place the browned lamb chunks on top of the rice.
- In a bowl, whisk together the yogurt, eggs, feta cheese, Parmesan cheese, and dill. Season with salt and pepper.
- Pour the yogurt mixture over the lamb in the baking dish.
- Bake in the preheated oven for 1 hour, or until the top is golden brown.
- Remove from the oven and let it rest for 10 minutes before serving.
