Island Fish Ceviche
Island Fish Ceviche is a refreshing and flavorful dish that originates from the Pitcairn Islands. This dish is perfect for a light and healthy meal, especially during the hot summer months.
Ingredients
- 1 lb fresh white fish fillets, diced
- 1 cup lime juice
- 1 red onion, finely chopped
- 1 bell pepper, diced
- 1 tomato, diced
- 1 jalapeno, seeded and minced
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- In a glass or ceramic bowl, combine the diced fish and lime juice. Make sure the fish is completely submerged in the lime juice. Cover and refrigerate for 2 hours, stirring occasionally.
- After 2 hours, drain the lime juice from the fish.
- Add the chopped red onion, bell pepper, tomato, jalapeno, and cilantro to the fish. Season with salt and pepper, and mix well.
- Refrigerate for an additional 30 minutes before serving.
