Island Fish Ceviche

Ingredients

  • 1 lb fresh white fish fillets, diced
  • 1 cup lime juice
  • 1 red onion, finely chopped
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1 jalapeno, seeded and minced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a glass or ceramic bowl, combine the diced fish and lime juice. Make sure the fish is completely submerged in the lime juice. Cover and refrigerate for 2 hours, stirring occasionally.
  2. After 2 hours, drain the lime juice from the fish.
  3. Add the chopped red onion, bell pepper, tomato, jalapeno, and cilantro to the fish. Season with salt and pepper, and mix well.
  4. Refrigerate for an additional 30 minutes before serving.
