Island Fried Rice

Ingredients
- 3 cups cooked white rice
- 1 cup diced pineapple
- 1 red bell pepper, diced
- 1 cup frozen peas
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 3 eggs, beaten
- 1/2 cup chopped green onions
- Salt and pepper to taste
Instructions
- In a large wok or skillet, heat the sesame oil over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced pineapple, red bell pepper, and frozen peas. Stir-fry for 3-4 minutes until the vegetables are tender.
- Push the vegetables to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
- Add the cooked rice to the wok and stir to combine with the vegetables and eggs.
- Pour the soy sauce over the rice and mix well. Cook for an additional 2-3 minutes to heat the rice through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
