Island Fried Rice

Ingredients

  • 3 cups cooked white rice
  • 1 cup diced pineapple
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 3 eggs, beaten
  • 1/2 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. In a large wok or skillet, heat the sesame oil over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the diced pineapple, red bell pepper, and frozen peas. Stir-fry for 3-4 minutes until the vegetables are tender.
  4. Push the vegetables to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
  5. Add the cooked rice to the wok and stir to combine with the vegetables and eggs.
  6. Pour the soy sauce over the rice and mix well. Cook for an additional 2-3 minutes to heat the rice through.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.
