Island Spice Curry Goat

Ingredients

  • 2 lbs goat meat, cut into chunks
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 2 tomatoes, diced
  • 2 sprigs thyme
  • 2 scallions, chopped
  • 1 scotch bonnet pepper, seeded and minced
  • 2 cups coconut milk
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the curry powder and cook for 1-2 minutes until fragrant.
  3. Add the onion, garlic, and ginger, and cook until the onion is softened.
  4. Add the goat meat and brown on all sides.
  5. Stir in the tomatoes, thyme, scallions, and scotch bonnet pepper.
  6. Pour in the coconut milk and water, then season with salt and pepper.
  7. Bring to a boil, then reduce the heat and simmer for 1.5-2 hours, or until the goat meat is tender.
  8. Adjust seasoning if needed and serve hot with rice or roti.
