Island Spice Explosion (Saare vürtsipomm)
Saare vürtsipomm, or Island Spice Explosion, is a traditional dish from Dominica that is bursting with Caribbean flavors. This dish is a perfect representation of the vibrant and diverse cuisine of the island.
Ingredients
- 1 lb chicken thighs, bone-in
- 2 tbsp Caribbean spice blend
- 1 onion, diced
- 3 garlic cloves, minced
- 1 bell pepper, sliced
- 1 cup coconut milk
- 2 cups long-grain rice
- 3 cups chicken broth
- 1 scotch bonnet pepper, whole
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken thighs with Caribbean spice blend, salt, and pepper.
- Heat vegetable oil in a large pot over medium heat. Brown the chicken thighs on both sides, then remove and set aside.
- Saute the onion, garlic, and bell pepper in the same pot until softened.
- Add the rice to the pot and stir to coat with the vegetable mixture.
- Pour in the coconut milk and chicken broth. Add the scotch bonnet pepper for flavor.
- Place the browned chicken thighs on top of the rice mixture.
- Cover and simmer for 30 minutes, or until the rice is cooked and the chicken is tender.
- Remove the scotch bonnet pepper before serving.
