Ingredients

  • 1 lb chicken thighs, bone-in
  • 2 tbsp Caribbean spice blend
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, sliced
  • 1 cup coconut milk
  • 2 cups long-grain rice
  • 3 cups chicken broth
  • 1 scotch bonnet pepper, whole
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with Caribbean spice blend, salt, and pepper.
  2. Heat vegetable oil in a large pot over medium heat. Brown the chicken thighs on both sides, then remove and set aside.
  3. Saute the onion, garlic, and bell pepper in the same pot until softened.
  4. Add the rice to the pot and stir to coat with the vegetable mixture.
  5. Pour in the coconut milk and chicken broth. Add the scotch bonnet pepper for flavor.
  6. Place the browned chicken thighs on top of the rice mixture.
  7. Cover and simmer for 30 minutes, or until the rice is cooked and the chicken is tender.
  8. Remove the scotch bonnet pepper before serving.
