Island Style Ceviche

Ingredients

  • 1 lb fresh white fish fillets, diced
  • 1 cup lime juice
  • 1 red onion, finely chopped
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. In a glass bowl, combine the fish and lime juice. Cover and refrigerate for 2-3 hours, stirring occasionally, until the fish is opaque.
  2. Once the fish is "cooked" in the lime juice, drain off the excess liquid.
  3. Add the red onion, bell pepper, tomato, jalapeño, and cilantro to the fish. Season with salt and pepper, and mix gently to combine.
  4. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
