Island Style Ceviche

Ingredients
- 1 lb fresh white fish fillets, diced
- 1 cup lime juice
- 1 red onion, finely chopped
- 1 bell pepper, diced
- 1 tomato, diced
- 1 jalapeño, seeded and minced
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a glass bowl, combine the fish and lime juice. Cover and refrigerate for 2-3 hours, stirring occasionally, until the fish is opaque.
- Once the fish is "cooked" in the lime juice, drain off the excess liquid.
- Add the red onion, bell pepper, tomato, jalapeño, and cilantro to the fish. Season with salt and pepper, and mix gently to combine.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
