Island Style Chicken Curry

Ingredients

  • 1.5 lbs chicken thighs, cut into bite-sized pieces
  • 2 tbsp curry powder
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot or deep skillet, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Add the chicken pieces to the pot and cook until they are browned on all sides.
  4. Sprinkle the curry powder over the chicken and stir to coat the pieces evenly.
  5. Pour in the coconut milk and chicken broth, and add the sliced red bell pepper.
  6. Bring the curry to a simmer, then reduce the heat and let it cook for 30-35 minutes, or until the chicken is tender and the sauce has thickened.
  7. Stir in the soy sauce and season with salt and pepper to taste.
  8. Serve the Island Style Chicken Curry hot over steamed rice.
