Island Style Chicken Curry

Ingredients
- 1.5 lbs chicken thighs, cut into bite-sized pieces
- 2 tbsp curry powder
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 2 tbsp soy sauce
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot or deep skillet, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- Sprinkle the curry powder over the chicken and stir to coat the pieces evenly.
- Pour in the coconut milk and chicken broth, and add the sliced red bell pepper.
- Bring the curry to a simmer, then reduce the heat and let it cook for 30-35 minutes, or until the chicken is tender and the sauce has thickened.
- Stir in the soy sauce and season with salt and pepper to taste.
