Island-style Chicken Satay

Ingredients
- 1.5 lbs chicken breast, cut into strips
- 1/4 cup coconut milk
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 2 cloves garlic, minced

- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/4 tsp cayenne pepper
- 1 lime, juiced
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine coconut milk, soy sauce, brown sugar, garlic, ginger, turmeric, cumin, coriander, cayenne pepper, and lime juice to make the marinade.
- Add the chicken strips to the marinade, cover, and refrigerate for at least 1 hour.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken strips onto the soaked skewers.
- Grill the chicken satay for 5-7 minutes on each side, or until fully cooked and slightly charred.
