Island-style Chicken Satay

Ingredients

  • 1.5 lbs chicken breast, cut into strips
  • 1/4 cup coconut milk
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp cayenne pepper
  • 1 lime, juiced
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine coconut milk, soy sauce, brown sugar, garlic, ginger, turmeric, cumin, coriander, cayenne pepper, and lime juice to make the marinade.
  2. Add the chicken strips to the marinade, cover, and refrigerate for at least 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken strips onto the soaked skewers.
  5. Grill the chicken satay for 5-7 minutes on each side, or until fully cooked and slightly charred.
  6. Serve the chicken satay with a side of rice and a sprinkle of fresh cilantro.
