Island-style Coconut Curry

Ingredients

  • 1 lb chicken, cut into bite-sized pieces
  • 2 tbsp coconut oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • Salt and pepper to taste
  • 2 cups cooked white rice, for serving

Instructions

  1. In a large pot, heat the coconut oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
