Island-style Coconut Curry

Ingredients
- 1 lb chicken, cut into bite-sized pieces
- 2 tbsp coconut oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 red bell pepper, sliced
- 1 cup coconut milk
- 1 cup chicken broth
- 2 tbsp curry powder
- 1 tsp turmeric
- Salt and pepper to taste
- 2 cups cooked white rice, for serving
Instructions
- In a large pot, heat the coconut oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
