Ingredients
- 1 lb conch, cleaned and diced
- 1 cup lime juice
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 1 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/2 cup fresh cilantro, chopped
- 2 tomatoes, seeded and diced
- Salt and pepper to taste
Instructions
- In a large glass bowl, combine the diced conch and lime juice. Make sure the conch is completely submerged in the lime juice. Cover and refrigerate for 2 hours, or until the conch is opaque and firm.
- After marinating, drain the lime juice from the conch and discard the lime juice.
- Add the chopped red and green bell peppers, red onion, jalapeño, cilantro, and tomatoes to the conch. Gently toss to combine.
- Season with salt and pepper to taste.
- Cover and refrigerate for an additional 30 minutes to allow the flavors to meld.
- Serve the ceviche chilled, garnished with additional cilantro if desired.
