Island Style Conch Chowder

Ingredients
- 2 lbs fresh conch, cleaned and diced
- 1 onion, chopped
- 2 bell peppers, diced
- 3 celery stalks, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 4 cups fish or vegetable broth
- 1 cup coconut milk
- 1 tsp thyme
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions, bell peppers, and celery. Cook until the vegetables are soft, about 5 minutes.
- Add the garlic and cook for another 2 minutes.
- Stir in the diced tomatoes, thyme, paprika, and cayenne pepper. Cook for 5 minutes, allowing the flavors to meld.
- Add the diced conch and pour in the fish or vegetable broth. Bring the chowder to a simmer and let it cook for 30 minutes.
- Pour in the coconut milk and let the chowder simmer for an additional 15 minutes.
- Season with salt and pepper to taste.
