Island Style Conch Chowder

Ingredients

  • 2 lbs fresh conch, cleaned and diced
  • 1 onion, chopped
  • 2 bell peppers, diced
  • 3 celery stalks, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 4 cups fish or vegetable broth
  • 1 cup coconut milk
  • 1 tsp thyme
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions, bell peppers, and celery. Cook until the vegetables are soft, about 5 minutes.
  2. Add the garlic and cook for another 2 minutes.
  3. Stir in the diced tomatoes, thyme, paprika, and cayenne pepper. Cook for 5 minutes, allowing the flavors to meld.
  4. Add the diced conch and pour in the fish or vegetable broth. Bring the chowder to a simmer and let it cook for 30 minutes.
  5. Pour in the coconut milk and let the chowder simmer for an additional 15 minutes.
