Island-style Curry Goat

Ingredients
- 2 lbs goat meat, cut into chunks
- 2 tbsp curry powder
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp ginger, grated
- 1 scotch bonnet pepper, seeded and minced
- 2 sprigs thyme
- 2 cups coconut milk
- 2 cups chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large bowl, season the goat meat with curry powder, salt, and pepper. Let it marinate for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the marinated goat meat and brown on all sides.
- Add the chopped onion, minced garlic, grated ginger, minced scotch bonnet pepper, and thyme to the pot. Cook for 5 minutes until the onions are soft.
- Pour in the coconut milk and chicken broth. Bring to a boil, then reduce the heat to low and simmer for 1.5 hours, or until the goat meat is tender.
- Adjust the seasoning with salt and pepper, if needed. Serve the Island-style Curry Goat hot with rice and peas.
