Ingredients

  • 2 lbs goat meat, cut into chunks
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 1 scotch bonnet pepper, seeded and minced
  • 2 sprigs thyme
  • 2 cups coconut milk
  • 2 cups chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, season the goat meat with curry powder, salt, and pepper. Let it marinate for 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the marinated goat meat and brown on all sides.
  3. Add the chopped onion, minced garlic, grated ginger, minced scotch bonnet pepper, and thyme to the pot. Cook for 5 minutes until the onions are soft.
  4. Pour in the coconut milk and chicken broth. Bring to a boil, then reduce the heat to low and simmer for 1.5 hours, or until the goat meat is tender.
  5. Adjust the seasoning with salt and pepper, if needed. Serve the Island-style Curry Goat hot with rice and peas.
