Island Style Lobster Bisque

Ingredients

  • 2 lobster tails, shells removed and meat chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 4 cups seafood or vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and carrot. Sauté until the vegetables are softened.
  2. Add the tomato paste, paprika, and cayenne pepper. Cook for 2 minutes, stirring constantly.
  3. Pour in the seafood or vegetable broth and bring the mixture to a simmer.
  4. Add the chopped lobster meat and simmer for 15-20 minutes until the lobster is cooked through.
  5. Stir in the coconut milk and season with salt and pepper to taste.
  6. Using an immersion blender or regular blender, puree the soup until smooth.
  7. Return the bisque to the pot and heat through before serving.
