Island Style Lobster Bisque

Ingredients
- 2 lobster tails, shells removed and meat chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 carrot, diced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 4 cups seafood or vegetable broth
- 1 cup coconut milk
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and carrot. Sauté until the vegetables are softened.
- Add the tomato paste, paprika, and cayenne pepper. Cook for 2 minutes, stirring constantly.
- Pour in the seafood or vegetable broth and bring the mixture to a simmer.
- Add the chopped lobster meat and simmer for 15-20 minutes until the lobster is cooked through.
- Stir in the coconut milk and season with salt and pepper to taste.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the bisque to the pot and heat through before serving.
