Island Style Mahi Mahi

Ingredients
- 4 Mahi Mahi fillets
- 1 cup coconut milk
- 1 lime, juiced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red chili, finely chopped
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- Salt and pepper to taste
- 2 tablespoons coconut oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 bunch scallions, chopped
- 1/4 cup fresh cilantro, chopped
Instructions
- In a bowl, combine coconut milk, lime juice, garlic, ginger, red chili, soy sauce, brown sugar, salt, and pepper. Mix well to create the marinade.
- Place the Mahi Mahi fillets in a shallow dish and pour the marinade over them. Let the fish marinate for 15 minutes.
- In a large skillet, heat coconut oil over medium heat. Add the marinated Mahi Mahi fillets and cook for 4-5 minutes on each side, or until the fish is cooked through.
- Remove the cooked fish from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and chopped scallions. Sauté for 3-4 minutes until the vegetables are tender-crisp.
- Return the cooked Mahi Mahi fillets to the skillet, spooning the coconut marinade over the fish. Cook for an additional 2-3 minutes to heat through.
- Sprinkle fresh cilantro over the dish before serving.
