Island Style Mahi Mahi

Ingredients

  • 4 Mahi Mahi fillets
  • 1 cup coconut milk
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red chili, finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • 2 tablespoons coconut oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 bunch scallions, chopped
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a bowl, combine coconut milk, lime juice, garlic, ginger, red chili, soy sauce, brown sugar, salt, and pepper. Mix well to create the marinade.
  2. Place the Mahi Mahi fillets in a shallow dish and pour the marinade over them. Let the fish marinate for 15 minutes.
  3. In a large skillet, heat coconut oil over medium heat. Add the marinated Mahi Mahi fillets and cook for 4-5 minutes on each side, or until the fish is cooked through.
  4. Remove the cooked fish from the skillet and set aside.
  5. In the same skillet, add the sliced bell peppers and chopped scallions. Sauté for 3-4 minutes until the vegetables are tender-crisp.
  6. Return the cooked Mahi Mahi fillets to the skillet, spooning the coconut marinade over the fish. Cook for an additional 2-3 minutes to heat through.
  7. Sprinkle fresh cilantro over the dish before serving.
