Island Style Mahi Mahi Tacos

Ingredients

  • 4 mahi mahi fillets
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 8 corn tortillas
  • 1 cup shredded cabbage
  • 1 mango, diced
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat the stovetop grill or a skillet over medium-high heat.
  2. In a small bowl, mix the olive oil, cumin, paprika, garlic powder, onion powder, salt, and pepper.
  3. Brush the spice mixture onto both sides of the mahi mahi fillets.
  4. Grill the fillets for 4-5 minutes on each side, or until cooked through.
  5. Warm the corn tortillas on the grill for about 30 seconds on each side.
  6. Assemble the tacos by placing a grilled mahi mahi fillet on each tortilla and topping with shredded cabbage, diced mango, and chopped cilantro.
  7. Serve with lime wedges on the side.
