Island Style Pilau

Ingredients

  • 2 cups basmati rice
  • 1 lb boneless chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 1/4 cup vegetable oil
  • 2 tbsp pilau masala (Zanzibari spice mix)
  • 4 cups chicken broth
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Add the chicken pieces and cook until browned on all sides.
  4. Stir in the pilau masala and cook for 2 minutes to release the flavors.
  5. Add the diced tomatoes and cook until they soften.
  6. Stir in the basmati rice and coat it with the mixture in the pot.
  7. Pour in the chicken broth and season with salt. Bring to a boil.
  8. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
  9. Fluff the pilau with a fork before serving.
