Island Style Pilau

Ingredients
- 2 cups basmati rice
- 1 lb boneless chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, diced
- 1/4 cup vegetable oil
- 2 tbsp pilau masala (Zanzibari spice mix)
- 4 cups chicken broth
- Salt to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and sauté until golden brown.
- Add the chicken pieces and cook until browned on all sides.
- Stir in the pilau masala and cook for 2 minutes to release the flavors.
- Add the diced tomatoes and cook until they soften.
- Stir in the basmati rice and coat it with the mixture in the pot.
- Pour in the chicken broth and season with salt. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
