Isle Of Wight Tomato Soup

Ingredients
- 1 kg Isle of Wight tomatoes, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onions and garlic, and sauté until softened.
- Add the chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Using an immersion blender, blend the soup until smooth.
- Stir in the heavy cream and season with salt and pepper.
- Simmer for an additional 5 minutes, then remove from heat.
