Ispanakli Borek (spinach And Feta Cheese Borek)
Ispanakli Borek, also known as Spinach and Feta Cheese Borek, is a popular Azerbaijani dish made with flaky pastry, savory spinach, and creamy feta cheese. This delicious pastry is perfect for breakfast, brunch, or as a snack.
Ingredients
- 1 package of phyllo pastry sheets
- 2 cups of fresh spinach, chopped
- 1 cup of feta cheese, crumbled
- 1 onion, finely chopped
- 2 eggs, beaten
- 1/4 cup of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix the chopped spinach, feta cheese, chopped onion, beaten eggs, olive oil, salt, and pepper.
- Unroll the phyllo pastry sheets and place them on a clean, dry surface.
- Place a spoonful of the spinach and feta mixture at one end of a pastry sheet, then fold the pastry over the filling to form a triangle. Continue folding the pastry in a triangle shape until the end of the sheet.
- Repeat with the remaining pastry sheets and filling.
- Place the filled pastries on a baking sheet and brush the tops with olive oil.
- Bake in the preheated oven for 25-30 minutes, or until the borek is golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
