Ingredients

  • 1 package of phyllo pastry sheets
  • 2 cups of fresh spinach, chopped
  • 1 cup of feta cheese, crumbled
  • 1 onion, finely chopped
  • 2 eggs, beaten
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the chopped spinach, feta cheese, chopped onion, beaten eggs, olive oil, salt, and pepper.
  3. Unroll the phyllo pastry sheets and place them on a clean, dry surface.
  4. Place a spoonful of the spinach and feta mixture at one end of a pastry sheet, then fold the pastry over the filling to form a triangle. Continue folding the pastry in a triangle shape until the end of the sheet.
  5. Repeat with the remaining pastry sheets and filling.
  6. Place the filled pastries on a baking sheet and brush the tops with olive oil.
  7. Bake in the preheated oven for 25-30 minutes, or until the borek is golden brown and crispy.
  8. Remove from the oven and let cool for a few minutes before serving.
