Ingredients

  • 1 cup couscous
  • 1 lb boneless chicken thighs

  • 1 red bell pepper, sliced
  • 1 zucchini, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 lemon, cut into wedges

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
  2. Heat the remaining olive oil in the skillet. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic, cumin, paprika, and turmeric, and cook for an additional 2 minutes.
  3. Stir in the bell pepper and zucchini, and cook for 5 minutes until they begin to soften.
  4. Return the chicken thighs to the skillet and add the couscous. Pour in 2 cups of water and bring to a simmer. Cover and cook for 10-12 minutes, or until the couscous is tender and the chicken is cooked through.
  5. Season with salt and pepper to taste. Garnish with chopped parsley and mint. Serve with lemon wedges.
