Israeli Shakshuka Bagel

Ingredients

  • 4 bagels
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) crushed tomatoes
  • Salt and pepper to taste
  • 4 eggs
  • Feta cheese for topping
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Slice the tops off the bagels and hollow out the centers to create a well for the shakshuka.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and bell pepper, and cook until softened, about 5 minutes.
  3. Add the garlic, cumin, paprika, and cayenne pepper to the skillet, and cook for 1 minute until fragrant.
  4. Pour in the crushed tomatoes and season with salt and pepper. Simmer for 10 minutes until the sauce has thickened slightly.
  5. Divide the shakshuka sauce among the hollowed-out bagels. Make a well in the center of each bagel and crack an egg into it.
  6. Place the filled bagels on a baking sheet and bake for 10-12 minutes, or until the egg whites are set but the yolks are still runny.
  7. Top with crumbled feta cheese and fresh parsley before serving.
