Ingredients

  • 1 1/2 cups dried chickpeas, soaked overnight
  • 1 small onion, roughly chopped
  • 3 cloves garlic
  • 1/4 cup fresh parsley
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • 1 tsp baking powder
  • 4 tbsp all-purpose flour
  • Vegetable oil for frying

Instructions

  1. Drain the soaked chickpeas and pat them dry with a paper towel.
  2. In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, cayenne pepper, and salt. Pulse until the mixture is finely ground but not pureed.
  3. Transfer the mixture to a bowl and stir in the baking powder and flour. Mix until well combined.
  4. Form the mixture into small balls or patties and place them on a baking sheet lined with parchment paper.
  5. Heat vegetable oil in a large skillet over medium heat. Fry the falafel in batches until golden brown and crispy, about 3-4 minutes per side.
